I had a special request a few nights ago: Pizza Soup. Here's what we came up with, together. (And the two of us cooking in my fun-size candy bar kitchen is always entertaining.)
Pizza Soup
olive oil
1 cup chopped onion
1/2 cup bell pepper, chopped (any color)
2 cloves garlic, or 2 tablespoons roasted garlic
black pepper
2 teaspoons dried basil
2 teaspoons dried oregano
about 20 pepperoni, quartered
2 sausages (we used Hillshire Farms Beef Hot Links, which say "gluten free" on the package), sliced and then quartered
1 carton Pacific Natural Foods creamy tomato soup
1/2 cup pizza sauce
1/4 cup fresh spinach, rolled and sliced (this makes thin strips that are perfect for soup)
1/2 cup mozzarella cheese, shredded
Start heating the olive oil in a large soup pot. Add garlic (minced), bell peppers, onions and pepper. Simmer until onions are translucent. Add soup, pizza sauce, pepperoni, sausages and spices. Simmer for 30 minutes until soup is heated through, and is toasty warm. Add the spinach when about 10 minutes of cooking time remains.
We served it with mozzarella on top, and with some quesadillas on the side. It was so hot and delicious, and a great way to make tomato soup into a filling meal, without sandwiches.
