Chicken Tenders!

These were such a hit tonight! I made them as a "surprise."

Surprise means:
"what's for dinner?"
"a surprise, I think you'll really like it!"
five minutes elapses...
"oooh, what is that smell? it smells so good!"
"UH, i had to rinse out that pan from shepherd's pie for the dinner. so...it was the shepherd's pie you smelled"
"oh ok"

nevertheless, it was still a surprise, and still very good!

I used Mrs. G. F.'s version of Coconut Chicken, and she posts some great general directions. I ended up using the food processor to grind up some Santita's corn chips (our favorite), and mixed that with the unsweetened coconut. As I was almost finished with the "club hand" process (as Alton Brown would say), I realized there wasn't enough breading. Flying all over the kitchen, in a puff of corn starch, I pulled down the box of Rice Chex and dumped some into the food processor. I made up another plate of breading with Rice Chex and coconut, and had to waste about 3/4 of what I made (since I didn't need much). I guess that's how it goes. A little experimentation to fuel the greatness! I also used the 2 Tbsp of Crisco, rather than the recommended coconut oil from Mrs. G. F., and baked it in a glass dish.

So, dinner was served with coconut chicken strips, Bullseye BBQ sauce, Ore Ida Tots!, and I had ketchup and some plain yogurt (not mixed together...ew!) with mine. Even though I'm from Idaho, I'm not a tot fan. Weird, I know.
