The Best Tomato Soup :)

For dinner, we had tomato soup and grilled ham and cheese sandwiches. It was one of the most delicious gluten free dinners I have ever had. (Please excuse me while I pat myself on the back.) One of the first things I bought was a case of Pacific Natural Foods Creamy Tomato Soup from Costco, which contains 6 cartons of soup. It even says "gluten free" on the bottom of the package.

In order to make sure it had "plenty of flavor," as requested by the fan club, I kicked it up a notch. I started with a touch of olive oil in a hot pan, and browned some minced garlic (I buy that in a large plastic container from Costco as well -- it saves a ton of time and no stinky hands.) I also grated some fresh black pepper, and then poured in the soup. When it was heating up, I also tossed in some dry basil (although fresh would have been delicious).

This was the best soup I've ever had :). So tasty!


It also makes a mean pizza soup, which turns it into a full meal!
